Flavors Of Italy: Nonna's Pickled Eggplant (Melanzane Sott'olio)
What a great recipe. I have been craving this Italian specialty. It combines my favorite flavors of salt, olive oil and eggplant. Perfect on a nice crusy Italian bread.

Peach Conserve-A Taste of Summer
This not too hard canning recipe is outrageously delicious. Use frozen peaches for fast prep time. Uses whole lemon slices for an unusual twist that is so good!
